My cousin Brandi shared this recipe with a bunch of us on Facebook. It sounded so delicious and right up my alley that I will be trying it soon. When I do, I’ll add a note to this post (note as of 1/8/12 – check out my post about the dish here). Frankly, since Brandi is from West Texas, I’m a little surprised this recipe didn’t include Rotel or some chili powder (WHEW those folks love their hot sauce). Just teasing a little, Brandi!
4 boneless Chicken Breasts
1/2 small bottle of Italian Dressing (Sundried tomato Italian was suggested)
1 teaspoon Italian Seasoning
1/2 Cup grated Parmesan cheese
4-6 med potatoes
Chicken on the bottom of the slow cooker, sprinkle (pour) with Italian dressing, spices and cheese. Cut potatoes in wedges and layer over chicken, sprinkle (pour) with italian dressing, spices and cheese. Salt and pepper to taste. Cook in crock pot on low for 6-8 hours.
